The vegetable variety in this super salad has greater power than any supplement in shifting your microbiome in a positive direction. It is important to understand that vegetable variety, even more so than quantity, is key in this process. With 6 different and colorful vegetables all in one recipe, this Super Salad will get you off to a good start!
Colorful Chopped Super Salad
- 1 small red cabbage, shredded
- 3 julienne sliced carrots
- broccoli stems julienne sliced and broccoli florets finely chopped
- Cauliflower, julienne sliced or shredded
- 10 Brussels sprouts, cut in half and thinly sliced
- 5-6 chapped Kale leaves, stems removed
- Pumpkin seed and/or sunflower kernels
- Craisins
Combine all the vegetables in a large mixing bowl.
Dress with Olive Oil and Red Wine vinegar and season with Salt and Pepper. You could also use your favorite pre-made dressing but be ware of store bought dressings as they may contain lots of sugar.
Sprinkle the Craisins, pumpkin and/or sunflower seeds on top of the salad and enjoy!
