Pumpkin Waffles

These Pumpkin Waffles have numerous health benefits! It’s packed with vitamins and minerals to help boost your immune system. Pumpkin is a low calorie, but nutrient-dense food which can help with weight loss.  It contains fiber, potassium, and vitamin C which helps support heart health.  It is also a good source of beta-carotene, an antioxidant that gives orange vegetables their color. It’s high antioxidant content can also help reduce your risk of chronic disease. Enjoy these pumpkin waffles for a healthy start your day.

Ingredients:
2 large bananas, mashed
1/2 cup pumpkin puree
5 large eggs
1/2 cup almond butter
1/4 cup melted coconut oil
1/2 up coconut flour
2 Tbsp. pumpkin pie spice
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
pinch of fine-grain sea salt
maple syrup

  • Preheat the waffle iron
  • Combine:  bananas, pumpkin, eggs, almond butter, and coconut oil in a food processor or blender and process until smooth.  Then add the coconut flour, pumpkin pie spice, baking soda, baking powder, vanilla, and salt and blend until well mixed.
  • Lightly brush the waffle iron with melted coconut oil and cook according to your waffle iron.
